VENISON INGREDIENTS
- 1 backstrap pounded out thin and cut into desired portions
- 1 bunch chopped cilantro
- 6 limes cut into wedges (Yes, you’ll need all 6)
- 3 sliced jalapeno
- Corona
- 6 Tbs Lawry's Casero Carne Asada Seasoning (more if needed)
GUACAMOLE INGREDIENTS
- 3 Avocados
- 1 Tbs Minced Shallot
- 1 Tbs Minced Jalapeno
- 1 Tbs Diced Tomato
- 1 Tbs Minced Garlic
- 1/8 Tsp White Pepper
- 1 Tbs Lemon Juice
- 1 Tbs Lime Juice
- 1 Tbs Orange Juice
- Salt to Taste
OTHER INGREDIENTS
- Sour Cream
- Tapatio
- Chopped Cilantro
- Minced White Onion
- Lime Wedges
- Corn Tortillas
INSTRUCTIONS
Venison
- In a large bowl add Corona, Cilantro, Squeezed Limes, Jalapenos, and Casero Seasoning. Marinade meat in Corona mixture for at least 24 hours. Be sure to add enough Corona to cover the meat.
- Preheat grill to 425 degrees F.
- Grill to medium rare then let rest.
- Chop meat into small cubes.
Guacamole
- Add the Avocados, Shallot, Cilantro, Jalapeno, Garlic, Tomato, Salt, Pepper, Lemon juice, Lime juice, and Orange juice into a bowl and mix. Be sure not to over mix. Some avocado chucks should be left.
Tortillas
- Cook Tortillas on skillet and serve family style.
